My favorite on venison. Tenderize steaks, either from backstap or the siloins. Place a piece of thin bacon down, lay a piece of meat on top. Smash about a half inch square piece of cream cheese onto the top of the meat. Add a jalopeno, mild pepper, or dill pickle, whichever you prefer. Roll this up so the bacon is on the outside, venison next, and cream cheese and pepper/pickle in center. Hold together with a toothpick. Soak in or sprinkle on a generous amount of your favorite marinade. Grill the rollups until the bacon is crisp over medium fire.

That will make you slap somebody.

This is one of my favorite venison recipes too. I use Stubb's Beef Marinade on the venison or sometime some KC Masterpiece. Always turns out great.

Made these last night. MMM MMM good. I used smoked gouda and they turned out great thanks for the recipe.
