I am surprised it took so long for anyone to mention Butkus. was the baddest of the bad.
Also on defense - Greer, Youngblood, Singletary, White LT and the whole Steel cutain defense.
Offense - Czonka, Harris, Blyer, Brown, Campbell, Dickerson and Clark.

There's just too many to list. It seems football was a lot rougher sport back in those days. Not if your running against Tedy Bruschi or Brian Urlacher
