Old school Tortilla Soup -
Chicken broth from boiled chicken One can Rotel
Combine broth and Rotel, season to taste, bring to rolling boil
Put broken tortilla chips and shredded cheese in bowl. Jalapeņos too if you like.
Ladle boiling soup over chips/cheese.
Enjoy
You can chop some chicken up in it but not needed IMHO. Make chicken tacos instead.

This is how I do it NG:
Step 1. Part out and boil a whole chicken until well done. Set aside to cool. Debone and save broth.
Step 2. Saute chopped onion, bell pepper, and jalapeno in sauce pot with butter until tender. Add one can of dice tomatos. Bring to simmer. Add salt, pepper, chili powder, garlic powder, and a little cumino (cumin). Note: At this point - you have a classic ranchero sauce (excellent over eggs, steak, with chips, ect). Transfer ranchero sauce to chicken broth and add chicken back into pot. Add chopped cilantro and bring to a simmer. Adjust seasoning to your preference. Serve with sliced avocado and freshly fried corn tortilla strips and Monterey Jack cheese.

Where's the rice? 1 whole chicken 1 diced onion 2 cans of diced tomatoes with chiles garlic powder or garlic salt pepper cumin A little bit of chile powder as much rice as you want corn tortilla strips or chips (careful on salt if you use chips) Mexican blend cheese Avocado I put the onion in with the chicken as it's boiling. As the chicken is cooling, I add the tomatoes, and rice. Tortilla strips are on the bottom of bowl. Then soup. Then cheese, and finally avocado. That's how this half breed makes tortilla soup.
