Just bought a box of roasted chilies. Headed home to take the skins off and put them up. Can't beat them.
Probably have chili rellenos for dinner tomorrow.

I roast 'em, let em cool and freezer bag 'em for year round hatch recipes. Usually do about 20lbs a year. Plus, the beer tastes great while roasting.

I slice longways and deseed. I tried doing them whole but there would also be a little moisture unless I dried them to oblivion. After 24 hrs or so of dehydratong a use my little coffee bean mixer and run the dried peppers into a fine powder. I wore gloves on the second batch! Don't inhale over the powder either.

Roasted another 40 each tonight . About 8 lbs. Got 20 plus lbs in the freezer for now through 2015

Jdk,

I roast them on my gas grill until the skin is black on all sides. Let em cool and then package 2-3 peps at a time and throw in the freezer. We wrap those in little Sammie bags and then in a gallon size freezer bag so you can pull out how many you need. Great for GC cheeseburgers, enchiladas, chicken breasts, soup and breakfast tacos. It is super easy. Pull em out, let then thaw, peel the skin off and start cooking.

Been there - painful! We use this in some of the jerky we make - great stuff

That is, we use the dehydrated/powdered green chilies

Must be a bumper crop this year. I just got a whole lot but I peeled and cooked down to a "Green" and froze them.
