I don't think it's being sharpened but rather like running a knife on a steel and straightening out the edge back to true. I have a hard time believing glass is cutting a new edge bit lord knows I've been wrong before.

That really does not sharpen a knife, it just cleans up the edge exactly the way using a steel does. You can do the same thing any number of ways. Often when I find I am cooking in a friends kitchen and they don't have a steel I will use the back of another knife.

For sharpening, the bottom of a ceramic coffee much does a fair job.

Still, the window technique will help keep your blade in shape while working on some hairy and muddy hogs as long as you don't let it get too dull first.

I'm gonna have to disagree with you on that. We grabbed some old dull knives out of the drawer that had been neglected and abused. You know, the old wooden handle, dingy colored kitchen knives that you use to pry open things and don't care if anything happens to them. These knives were duller than a butter knife. We ran these over the window as above and after a few minutes, you could see that it had been working. Yeah, they weren't sharp enough to shave hair but you could definitely tell it had done some good. We even took a putty knife that someone had cut the blade to make it look like a knife blade and was fairly impressed by that.

If you have empirical knowledge then who am I to dispute that. I did just watch the video, something I did not do before my last post, and even the guy in the video says it is to hone your edge just as a chefs ceramic does. So his point and mine are the same. Honing will keep a sharp edge in good condition, but usually does not do much for a truly dull edge.

If your results are better than my assumptions then I gracefully bow to you and will remember the lesson should I ever be stuck with a dull knife and only a car window to sharpen it with. Otherwise, I would need to get Bob's quote out of my sig.. grin

Hey Wader,

I am not stirring the pot in any way and i do believe that it would help retain an edge on a blade. I was just stating that i was truly surprised at the ability to somewhat sharpen a dull and lifeless blade. Mainly just passing along a "homemade" remedy in case someone could find it to be useful. here is my 2 cents and diy tip for you guys. I have been a chef for the past 15+ years and what I know about knives is if you look at them under a microscope the edge of the blade is not smooth rather it looks like a sharks mouth with thousands of tiny teeth. When you hone the knife it aligns the teeth helping them slice evenly through something a right handed knife and a left handed knife user the teeth will acually angle to one side or the other slightly. If you do not have a steel to sharpen the back of another knife will work somewhat as well as using the back side of a ceramic plate works well(diy tip). If a knife is damaged it needs to be reworked with a stone I prefere a wet stone to a oil stone. Thanks for posting the tip I wish we had a diy section as a sticky.
