I like deer with lots of mass that are high and wide. Matter of fact just go watch the Bucks of Tecomate and all those bucks are the kind I like. Lol

I have two. Taste and beauty with both whitetail and axis but hands down a yearling or 2 yr old axis taste as good as beef to me, and easy fixing or cooking too. Both types offer nice wall decor too if mature.

I like deer that have tall tines and matching mainframes, and if they have drops that makes them even better.... Also like split brows and kickers....

Anything bigger than I got which won't take much. I seem to have a knack of attracting small ones. But if I had to pick, a nice mainframe 8 or 10 thick. Then I can use the trash 17 points to fill in the gaps on the wall later.

Try this -
Same bacon wrap, but poke a bunch of holes using a fork, put a dab of butter (healthy choice, I cain't believe it aint better) or some other substitute on top. Then cook it over pecan or mesquite in indirect heat until it's done the way you like it.

Best used with a backstrap but it does justice to any cut of venison.
