Created this the other night.

Ingredients:

Garlic
Axis meat (duh)
Shallots
Gin
Wine (red) don't use crappy cooking wine!!!!!!!
Rosemary (whole fresh)
Grapeseed oil

Step 1. Dice up shallots and cut the small leaves off the rosemary. I used just 3 of the whole rosemary pieces to cut the little leaves off as it's a rather strong spice.

Step 2. Put aforementioned spice/shallots in a blender. Add a splash of the gin and pour in enough grapeseed oil to give you a medium runny marinade. Puree and pour into a freezer bag. Let sit for 6-8 hours.

Step 3. Pour some of the grapeseed oil into a frying pan and add a good size spoonfulls of the chopped garlic. Heat it up pretty hot but not scorching hot. Add the red wine to form a good demiglaze. After this is heated enough to cook add the marinated meat including extra juice and sear until cooked to desired preference.

Sounds delicious!!!!! You don't say where you live. Stop by our Katy NSTRA trial, and I'll trade you some cleaned quail for some axis.
