anything you would do with a deer, do it with Axis. Good stuff. Not wild tasting, and the backstraps of a big Axis are pretty big. Season, wrap with bacon, and grill whole

However you like it is great. I grind very little axis except trimmings. Rest is usually steaks and roast

If you happen to have an electric barbeque grill, that is the ticket for a lean piece of meat. We have cooked axis and deer on gas, charcoal and electric. BY FAR...the meat turns out to be more tender and moist on the electric. I'm not sure why...I'm guessing it has to to do with the flames.

Have some of that axis meat made into sausage.....it is soooooo good. Very high in iron and low in saturated fat as well. Comparable to elk.

Man some of the best deer burgers I have ever eaten were axis meat, I think they make a much better ground meat than whitetail. Great chili meat too IMO.

Axis jerky is one of my favorites. Or what we call ranch burgers. Ground axis with bacon ends and pieces ground into the deer. Press into patties.... So delicious

I shot opening morning and took an axis doe....second year hunting this family property and we have a free ranging herd. So far I had my trimmings sent away for smoked links and I carved several roasts and such outa the rest. She has made two GREAT stews so far. This weekend she's gonna make even better gravy steaks lol. Axis taste different because of what they eat. There is no comparison to whitetail. My gf told me yesterday that she thought she was eating beef in my last two stews.
