TD's in Strawn ain't too bad. Really really good breakfast sausage. Basic package of steaks, backstraps & burger was $70, I think, and lots of other choices.

Bernhard's does a great job. Owner - Mark Lampson is a great guy to deal with. Woodbury's a little too commercial/expensive in my opinion. DFW area - have used Syracuse - no opinion one way or the other. I intend to try Old Town in Lewisville and Hirsch's Meats in Plano due to vicinity to work/home. May try Rusts since close to my lease - is it open or not?

Ralph, Rusts does a great job and is also very clean. I have been using them for 15 years. When I started Elmer and Dorice Rust were running it. They sold to a couple that has picked right up where they left off and have continued doing a top job. I live 45 minutes to the east of there and hunt close to home. There is closer processors to my home but Rusts always does a great job so it is well worth the trip. Rusts bones the deer instead of cutting the bone with a bandsaw which keeps from getting saw dust and marrow all over the steaks. If you want they run the steaks thru a cutlet machine and the grind the scraps for burger or chili. The cost for that is $60. Thier sausage is $2.30 a pound. I have not had any of thier sausage in several years but when I did it was very good. They also let the deer hang in the cooler for several days before processing it. Rusts does a great job and I am sure you will be happy with them if you give them a try.

Clay's between deleon, and dublin, did one for me, did pretty good, but they the a little higher i think $68. They also made it a wednesday only pick-up day. I had to take off work to pick up my deer i was pissed, and won't be back to them again, ever !!!

Stephens processing in Abilene. They used to be south of town near Buffalo Gap, but opened a new facility in town this year. Everyone on our lease that doesn't process their own uses Stephens. I've only been hunting out there for the last 3 years, but all the guys on the lease longer than me say nothing but great things about them.
Last year $65 would turn a field dressed deer into steaks and ground meat, with sausage going up from there. They'll skin the deer for you, and if you're too squemish to clean your own, they'll do it for $35. Great guys, clean place, and as long as I hunt in the area they'll be processing my deer.

I usually process my own deer. I have used Naturally Fresh, once before. I made a mistake and let the deer stay in the heat too long, so flys got to it. They had to trim a bit of meat off, but I still had most my deer. Clarks and Winford on the Garden City Hwy. is suppose to be pretty good. I hear they make a good jalepeno sausage. Any you guys in the Midland/Odessa area on here know of any good places, please post.

The Sportman's Memory Shop Grapeland Great Jap/cheese links and very neat, very fast turnaround. 1 week and they are done. They are very detailed and make sure that the packaging is "wife" friendly.

Well i picked up my deer from rust's and well i'm not so sure i'll take it back there. I took a 130 lb doe there that was shot in the elbow and directly into the heart. They told me the whole shoulder was ruined and couldn't be used. And as always there was only a few 6 small pack's of backstrap tenderized and, a little pack of tenderloin. I processed my buck myself and had 10 times more backstrap, and twice the tenderloin. Oh ya i got the smallest roast that i have ever seen. It looked like the size of the smallest muscle in the hind quarter, not the biggest. If you bought a 1 pound pack of hamburger and split it in half that is the size of the roast they gave me in 2 small packs. I am very disappointed !!!!

There's one in Baylor Co. in Seymour called Bayco that has done well for me in the past. Reasonable prices too.

Austin, Tx. Johnny G's Butcher in South Austin does very good work on any kind of sausage. 12 different kinds i believe.
