Hey psycho0819,
We have a lease in San Saba and have used Hibler's. What's your opinion on Hibler's? Honestly, I don't care for it much. The facility seems a bit nasty looking. The summer sausage isn't that great either.
If the weather permits, I usually take my deer to Fischers in Muenster, but during warm days I just run them over to Hibler's simply because it's only a 15 minute drive from our lease.
Do you know where the next closest processor is near San Saba, beside Hibler's?

Closest for us (south of town) would be Lampasas I imagine. Maybe Cherokee if they have a processor in town.
Hibler's is not as bad as some places I've seen. I feel very confident that I'm getting my own deer from him. That's a plus for me. I personally don't care for just about any of his sausages. Most guys on the lease rave over it. I am the only non-drinker on the lease though,LOL. They do make some very good jerky on the other hand.
I would rate them average. I've seen better, and alot worse.
Where around San Saba are y'all huntin'? We're south on 1031 til the pavement ends and turn right. About 15-16 miles out of town.

I usually only take him 1 deer a year. And on that one I have them pull the backstraps and grind the rest. That gives us enough ground to last the year. I cut up the others myself.

Let's go ahead and make this a sticky - maybe cut down on the threads...and bandwidth.  I have another one - Dodd Processing in the Texarkana/Redwater area. $55.00 and do a great job. Hunter is required to skin the deer - they'll do the rest.

We hunt the north-central part of San Saba. If you head north from THE grocery store in San Saba on Hwy 190, you'll hit China Creek Rd. Cross the San Saba river and then hook up with CR 202. Our lease is right out there off of 202.
You are exactly right about getting your own deer back at Hibler's. That is definitely a bonus. Not a whole lot of processors out there today that you definitely know you're getting your own deer back...
One of the old boys on my lease has been using Hibler for years and years and swears by it. I just wanted to see what else was in the area. Maybe I'll call around Lampasas and Goldthwaite and see what processors they have in those two towns.
Worst case, I'll ice the deer down and take it back up north with me to Fischer's Meat Market in Muenster. Excellent sausage, but pretty pricey!

I've used both Kubys and Old Town meat market. Both have done me right, and I'm 99%sure I got my own deer/hog back. I once used a processor down in New Braunfels, just off I-35 that did a great job as well. I have processed my own, but find that having time an issue.

Rusts is the best I ever used. They are just east of Cisco on old 80. About a 45 minute drive from my house but worth thr drive.

I have been watching this thread to see if anyone posted about Rust's or other processors around Ranger/Eastland/Cisco.
I was told Rusts was the nearest processor to Eastland. I went by there a couple of Saturdays ago to check it out. It was open but nobody was around. I went inside and called out to see if anyone was there, but no one answered so I left. I have been wondering about them since.
From your post, it sounds like you are very satisfied with their work. Can you give some more information about them?
I'd appreciate any additional info you could provide.

JJH I have tried bernhardt's woodberries and I forget the name but the one behind the police station. An older couple bought it last year. I liked them all the one behind the police station is my pick though I'm still looking. I think I'm a bit picky on my sausage (dry Links) But I would go to any woodberries getting a bit pricey. All this depends on an individuals taste I have been to all three and at least trust them.

broadway locker plant in downtown san antonio is a good one. so is scwabs in new braunfels. do not take it to granzins in new braunfels though, that place is terrible. depending on where you hunt, Seco Creek wildlife and Processing in D'hanis is a great place to go if you have to travel on highway 90 back into town. and Pinshorns in Marion is excellent if you hunt out in seguin area

In Coleman.... Hall's on the north side of town.. In Cross Plains... Cross Plains Frozen Food Locker...$65 for hog...gooood smoked jalapano & cheese german & summer sasuage...GREAT hot breakfast sasuage...got ours back in a wk when we took a hog in...ask bayourat(my other half) to double check im sure im right
